Sugar Cured Pork - cooking recipe
Ingredients

1 qt. coarse salt
1 oz. saltpetre
1 1/2 oz. black pepper
5 oz. brown sugar
Preparation

Mix well and rub the meat well.
Let it lay ten days, then hang up.
This makes enough for 100 pounds meat.
Let the meat cool overnight before rubbing the mixture on.
