Ingredients

2 c. raw grated potatoes
2 eggs
2 Tbsp. flour
1/4 tsp. baking powder
1/2 tsp. salt
grated onion (as much or as little as you like)
Preparation

Peel and grate potatoes into ice water.
Drain and dry in paper towels until you have 2 cups.
Beat eggs; mix in onion, flour, salt and pepper.
Combine with very dry potatoes.
Drop by large spoonfuls onto sizzling, hot griddle.
Brown to degree you like, then turn and brown other side.
Keep warm until all are fried.
