Spanish Potatoes - cooking recipe

Ingredients
    4 to 5 medium potatoes
    3 Tbsp. chopped onion
    3 Tbsp. chopped green pepper
    4 Tbsp. mayonnaise
    4 Tbsp. cream
    2 Tbsp. chopped red pimentos
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. grated yellow cheese (Colby)
Preparation
    Boil potatoes.
    Cool and peel.
    Cut into 1/2-inch thick round slices.
    Combine remaining ingredients in a separate bowl.
    Coat the bottom and sides of a shallow 2-inch baking dish with butter. Arrange a layer of sliced potatoes on the bottom and spread with mayonnaise combination.
    Repeat and top with another layer of spread.
    Bake in a 375\u00b0 oven for about 15 minutes or until all cheese topping melts.
    Cut into squares.
    Serves 6.
