Surprise Salmon Cakes - cooking recipe

Ingredients
    1 (1 lb.) can salmon
    5 slices day old bread, shredded
    1 small chopped onion
    2 Tbsp. chopped parsley
    1 Tbsp. lemon juice
    1/4 c. milk
    1/4 lb. American Cheddar cheese
    2 eggs
Preparation
    Drain liquid from salmon.
    Into mixing bowl, add flaked salmon, slightly beaten eggs and remaining ingredients except cheese.
    Mix. Shape into cakes around 1/4-inch cube of cheese.
    Brown cakes in small amount of shortening.
