Salmon Croquettes - cooking recipe

Ingredients
    1 flat can pink salmon
    14 saltine crackers, crushed
    1 egg
    1 Tbsp. Parmesan cheese, grated
    1 Tbsp. lemon juice
    2 Tbsp. white cornmeal
    1 Tbsp. shortening, melted
Preparation
    Mix together salmon, crackers, egg, cheese and lemon juice. Form mixture into croquettes; roll in cornmeal.
    Brush with shortening.
    Brown in Teflon skillet at 360\u00b0.
    Yield:
    4 servings.
