Tucson Chicken - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1 onion, julienned
1 green pepper, julienned
1/2 lb. mushrooms, halved
1/2 tsp. garlic, chopped
1/4 c. tomato paste
2 1/2 lb. chicken breasts, dusted with seasoning salt/herb mixture (store bought)
2 tsp. basil leaves
1/2 c. chicken broth
2 c. tomatoes
Preparation

Saute onions and peppers in vegetable oil.
Add mushrooms, garlic and tomato paste.
Coat chicken breasts with seasoning salt/herb mixture.
Brown lightly in oil.
Add vegetable mixture and broth.
Cook, covered, for 30 minutes.
Add tomatoes.
Cover; cook for 15 minutes.
Serve over noodles or rice.
