Eggplant Au Gratin - cooking recipe

Ingredients
    4 small eggplants
    2 large onions
    cracker crumbs and butter
    1 lb. sharp cheese
    2 eggs
    salt and pepper
Preparation
    Peel and boil eggplants in salted water until soft; strain off water and mash.
    Fry sliced onions in butter.
    Beat eggs.
    Grate cheese.
    Combine ingredients; salt and pepper to taste.
    Place in greased casserole.
    Cover with crumbs; dot with butter.
    Bake in moderate oven for 45 minutes.
    Serves 8 to 10.
