Breakfast Muffins - cooking recipe

Ingredients
    1 c. bran cereal, crushed
    2/3 c. milk
    1 3/4 c. all-purpose flour
    3/4 c. chopped apple
    1/2 c. packed brown sugar
    1/2 c. carrots, peeled and shredded
    1/4 c. granulated sugar
    1/4 c. flaked coconut
    1/4 c. vegetable oil
    2 eggs
    3 tsp. baking powder
    2 tsp. ground cinnamon
    1 tsp. vanilla
    1/2 tsp. salt
Preparation
    Heat oven to 375\u00b0.
    Grease 12 medium muffin cups or line with paper baking cups.
    Mix cereal and milk in a larger bowl; let stand 5 minutes until cereal is softened.
    Stir in remaining ingredients.
    Fill muffin cups almost full.
    Bake 22 to 25 minutes until golden brown.
    Immediately remove from oven.
    Yields 1 dozen.
