Grandmaw'S Apple Pecan Cake - cooking recipe

3 large eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 3/4 c. all-purpose flour
1 tsp. baking soda
1/8 tsp. salt
2 tsp. ground cinnamon
4 c. peeled Granny Smith apples
1 c. chopped pecans
Preparation

Preheat oven to 350\u00b0. Beat eggs at medium speed until thick and pale. Gradually add sugar; beat until blended. Add oil and vanilla; beat at low speed until blended. Combine flour, baking soda, salt and cinnamon. Add to beaten mixture and stir until blended. Stir in apples and pecans. Pour into greased and floured 12-cup Bundt pan. Bake 1 hour and 25 minutes or until tester comes out clean. Cool in pan. Remove from pan when completely cool. Glaze, if desired.
