Sweet Potato Muffins - cooking recipe
Ingredients

1/2 c. butter
1 1/4 c. sugar
2 eggs
1 1/4 c. canned sweet potatoes, mashed
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 c. chopped nuts
1/4 c. raisins, chopped
1 c. milk
Preparation

Heat oven to 400\u00b0.
Grease tins (do not use paper liners). Cream butter and sugar; add eggs.
Puree sweet potatoes and blend. Sift dry ingredients.
Add nuts and raisins.
Mix the 2 mixtures alternately with milk.
Do not overmix.
Fill tins completely. Muffins will not rise very much.
Bake at 400\u00b0 for 25 minutes.
