Three-Grain Pilaf With Dried Apricots And Cherries - cooking recipe

Ingredients
    1/4 c. dried cherries
    1/4 c. dried apricots, diced
    1/2 c. apple juice
    1/2 c. chopped onion
    1 Tbsp. butter
    1/3 c. millet
    1/3 c. quinoa
    1/3 c. bulgur wheat
    3 c. vegetable broth
    1/2 tsp. soy sauce
Preparation
    Combine first 2 ingredients and soak in apple juice.
    Saute onion in butter over medium-high heat for about 5 minutes or until lightly browned.
    Add millet and cook 3 to 4 minutes longer.
    Stir in quinoa, bulgur and broth; bring to a boil.
    Drain fruit and add to grains.
    Shake in soy sauce.
    Cover and bake in a 350\u00b0 oven for 35 minutes.
    Remove from oven and let pilaf sit, covered, for 5 minutes before serving.
    Serves 6 to 8.
