Sweet Potato Crunch - cooking recipe
Ingredients

5 c. peeled cubed sweet potatoes (2 lb.)
1 c. unsweetened applesauce
1 egg yolk
1 tsp. vanilla
1/2 tsp. ground cinnamon
2 egg whites
vegetable cooking spray
1/2 c. firmly packed brown sugar
2 Tbsp. flour
1 Tbsp. margarine, melted
Preparation

Cook potatoes until tender, about 15 minutes.
Cool.
In blender, process until smooth the potatoes, applesauce, egg yolk, vanilla and spices.
Beat egg white until stiff peaks form. Gently fold into potato mixture and spoon into 1 1/2-quart souffle dish coated with cooking spray.
Combine brown sugar, flour and margarine.
Sprinkle over potato mixture.
Bake at 350\u00b0 for 35 minutes or until set.
Serve immediately.
