Orange Praline Yams Casserole - cooking recipe
Ingredients

5 lb. canned yams, drained
2/3 c. orange juice
1 Tbsp. grated orange peel
5 Tbsp. brandy
2 tsp. salt
ground pepper
1 tsp. ground ginger
1 c. melted butter
1 c. light brown sugar
3 egg yolks
1 c. chopped pecans
1 tsp. ground cinnamon
Preparation

In a mixing bowl with electric mixer, beat yams until smooth. Add orange juice and peel, brandy, salt, pepper to taste, ginger, 1/4 cup melted butter, 1/3 cup brown sugar and egg yolks, beating until mixture is light and fluffy.
Pour into buttered shallow 2-quart casserole.
In a small bowl combine remaining melted butter, remaining brown sugar, pecans and cinnamon.
Spread evenly over yams (at this point casserole may be refrigerated overnight). Bake at 350\u00b0 for 45 to 50 minutes or until golden brown and bubbly.
Let stand 10 minutes before serving.
Serves 10 to 12.
