Veggie Potato Melt - cooking recipe

Ingredients
    4 large baking potatoes
    1 c. sliced mushrooms
    1/2 c. zucchini, julienne cut
    1/2 c. chopped red pepper
    1/4 c. thinly sliced red onion
    1 tsp. dried basil leaves
Preparation
    Pierce potatoes; place on a paper towel.
    Microwave until tender.
    Let stand 5 minutes.
    Combine other ingredients and microwave on High until tender (2 to 3 minutes).
    Split potatoes and fill with vegetable mixture.
    You may top with cheese or butter.
    Microwave another 30 seconds to melt the topping.
