Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    2 c. crackers, crushed
    1 small onion, chopped
    4 oz. Cheddar cheese, grated
    2 eggs
    1/2 stick oleo
    1 c. milk
Preparation
    Peel and cut eggplant into large cubes.
    Cook until tender. Drain well.
    Add beaten egg.
    Stir well.
    Add crackers, onion, cheese, oleo and milk.
    Salt and pepper to taste.
    Pour in greased casserole.
    Bake at 350\u00b0 for 30 minutes.
