Carrot Sandwiches(Appetizer) - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese
    4 small carrots, grated finely
    1/2 c. chopped pecans
    1 Tbsp. onion juice
    salt and pepper to taste
    mayonnaise
    brown bread
Preparation
    In mixer, cream the cheese and add grated carrots, onion juice, salt, pepper and enough mayonnaise to moisten.
    Add pecans. Trim bread.
    Spread filling and roll like jelly roll.
    (We rolled our bread prior to spreading filling.) Chill or freeze before slicing into 1/2-inch slices.
    Freezes well.
