Fried Eggplant - cooking recipe

Ingredients
    1 1/2 lb. eggplant
    flour as needed
    1 egg
    salt to taste
    pepper to taste
    Crisco for frying
Preparation
    Cook
    peeled and cut up eggplant in water until tender. Drain all water.
    Mash eggplant; mix in egg, salt and pepper. Add enough
    flour
    to
    make slightly thick.
    Drop by teaspoon into hot
    grease.
    Cook until brown and drain on paper towels or in colander.
