Potato Candy - cooking recipe
Ingredients

1 medium size potato
2 lb. xxxx sugar
2 tsp. vanilla
peanut butter
Preparation

Peel and boil potato, then mash fine.
Add vanilla.
Add xxxx sugar, little by little.
Stir until it gets like a pie crust. Sprinkle wax paper with xxxx sugar and pour mixture on.
Roll out like pie crust.
Spread peanut butter on top and roll up like jelly roll.
Slice and then put in refrigerator.
The longer it sets, the better it tastes.
Drops of food coloring may be added, if desired.
Must be kept refrigerated.
