Laura'S Christmas Morning Eggs - cooking recipe
Ingredients

10 eggs
3 Tbsp. sour cream
salt and pepper to taste
1 lb. sausage (1/2 lb. hot, 1/2 lb. mild)
1 bell pepper, chopped
1 medium onion, chopped
1 c. fresh mushrooms, sliced
1 can Ro-Tel tomatoes, drained
8 oz. American processed cheese
8 oz. Cheddar cheese
8 oz. Mozzarella cheese
Preparation

Mix eggs, sour cream, salt and pepper in blender and pour in 9 x 13-inch casserole dish.
Bake 7 minutes at 400\u00b0.
Cook sausage. Add vegetables except Ro-Tel tomatoes and saute until tender.
Add tomatoes and pour over egg mixture.
Melt cheeses and spread over egg and sausage mixtures.
Refrigerate overnight or longer.
Bake uncovered at 350\u00b0 until hot and bubbly.
Good served with grits souffle and hot curried fruit.
