Sweet Potato Balls - cooking recipe

Ingredients
    4 large or 1 large can sweet potatoes (yams)
    2 Tbsp. butter or margarine
    1 Tbsp. salt
    1/2 lb. pineapple juice (now if needed)
    1/2 c. brown sugar
    1/2 Tbsp. cinnamon
    1 medium can pineapple slices
    1 small can grated coconut
    1 large bag marshmallows
Preparation
    Mash sweet potatoes.
    Add butter, salt, pineapple juice, brown sugar and cinnamon.
    Place pineapple slices in large baking dish. Roll sweet potato mixture around a marshmallow to form a ball. Then roll sweet potato ball in coconut.
    Place ball in the center of a pineapple slice.
    Bake at 250\u00b0 until marshmallow melts or for 5 minutes.
    Makes 1 to 2 dozen.
