Rice Pilaf - cooking recipe

Ingredients
    1 large onion, chopped (1 c.)
    1 garlic clove, minced
    1/4 c. butter or margarine
    2 1/2 c. chicken broth
    1 c. uncooked long grain rice
    1/2 c. chopped parsley
    1/4 c. raisins or carrots, plumped*
    1/4 c. pine nuts
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    * To plump raisins, place them in a small bowl, pour boiling water over them and let stand 20 minutes.
    Drain and pat dry on paper toweling.
