Ingredients

2 c. milk
1/4 tsp. salt
3 eggs, beaten
1/4 c. melted butter
1 yeast cake dissolved in warm water
1 c. sugar
6 or 7 c. flour
1/2 tsp. nutmeg
Preparation

Scald the milk and set aside to cool.
To the dissolved yeast add 1/2 cup of flour and mix to batter.
Add to the milk which has been scalded and allowed to become lukewarm.
Stir in 1 teaspoon sugar and about 3 cups flour.
Set in warm place to rise overnight.
In the morning, add the eggs, nutmeg, butter, sugar and salt; mix thoroughly.
Stir enough flour until batter can no longer be stirred with a spoon.
Set aside to rise.
Roll on well floured board and cut with doughnut cutter.
Let rise again and fry until golden brown.
