Mexican Turkey Casserole - cooking recipe
Ingredients

2 pt. cooked turkey, drain and reserve broth
1 (10 1/2 oz.) pkg. tortillas
2 c. each diced onion and bell pepper, saute and set aside
1 (10 3/4 oz.) can each 99% fat free cream of chicken and cream of mushroom soup
10 oz. can Ro-Tel tomatoes
1 (8 oz.) can tomato sauce (no salt added)
1 (4 oz.) can mild chopped green chilies (undrained)
1 Tbsp. sliced jalapenos, diced
8 to 10 oz. no fat grated Cheddar cheese
Preparation

Place tortilla chips in 12 x 15 x 2-inch Pam sprayed pan. Crush chips slightly.
Add cut up turkey.
Blend 1 cup broth and remaining ingredients (except cheese) and pour over turkey.
Top with cheese.
Cover with foil and bake in 350\u00b0 oven about 45 to 50 minutes.
