Twice Baked Sweet Potatoes - cooking recipe

Ingredients
    6 large sweet potatoes, baked
    1/4 c. Parkay margarine, melted
    1/2 tsp. cinnamon
    1/2 tsp. salt
    1/4 tsp. ground nutmeg
    3 c. miniature marshmallows
    1 (8 oz.) can crushed pineapple, drained
    1 c. chopped walnuts
Preparation
    Preheat oven to 350\u00b0.
    Cut each potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch shell.
    Mix potatoes, 2 tablespoons margarine, cinnamon, salt and nutmeg with an electric mixer until smooth.
    Stir in 2 cups marshmallows, pineapple and 1/2 cup marshmallows and walnuts; spoon into shells.
    Toss remaining margarine, marshmallows and walnuts; sprinkle on top of potatoes. Bake 20 minutes.
    Makes 12 servings.
