Hopping John - cooking recipe
Ingredients

1 c. sliced celery
2/3 c. chopped onion
1 minced clove garlic
1 Tbsp. oil
4 c. water
2 (10 3/4 oz.) cans chicken broth
16 oz. pkg. frozen black-eyed peas
1/2 lb. cooked ham, cut into cubes
1/4 tsp. red pepper
1 bay leaf
3 c. cooked rice
Preparation

Saute celery, onion and garlic in oil, in large Dutch oven, until tender.
Add water and remaining ingredients except rice. Simmer for 40 minutes, until peas are tender.
Remove bay leaf and serve over rice.
