Bleu Cheese Dressing #1 - cooking recipe

Ingredients
    2 eggs, coddled for 1 minute
    1 c. olive oil (approximately)
    1/2 tsp. white pepper
    1 tsp. salt
    1 Tbsp. lemon juice
    1 Tbsp. tarragon vinegar or regular vinegar
    6 oz. veined cheese (Blue, Roquefort or Stilton)
Preparation
    Coddle eggs in simmering (not boiling) water for exactly 60 seconds.
    Put eggs in blender and blend for a few seconds, then slowly add half of the olive oil while blending.
    Add the remaining ingredients, except for the rest of the oil, and blend until the cheese is chunked to the size desired.
    Slowly add the rest of the oil while blending.
    If the dressing starts getting too thick, stop adding the oil before the full cup is in.
