Jenny'S Eggs Florentine(American Meatless Breakfast) - cooking recipe

Ingredients
    4 poached eggs
    4 slices toasted English muffin
    4 slices Cheddar cheese
    3/4 c. mayonnaise
    3/4 c. sour cream
    1 Tbsp. mustard
    1 Tbsp. lemon juice
    1/8 tsp. cayenne
    1/2 c. cooked, squeezed dry spinach
Preparation
    Blend last 6 ingredients in a blender or processor.
    Gently heat resultant sauce in saucepan.
    Place cheese slices on toast. Broil them until cheese melts.
