Lemon Chicken - cooking recipe

Ingredients
    1 lb. boneless chicken breast, cut in strips
    1 onion, chopped
    1 large carrot, sliced
    1 garlic clove, minced
    2 Tbsp. oleo
    1 Tbsp. cornstarch
    1 (14 1/2 oz.) can chicken broth
    2 to 3 Tbsp. lemon juice
    1 tsp. grated lemon peel
    salt
    1 1/2 c. instant rice, uncooked
    1 c. frozen broccoli
    1/4 c. parsley
Preparation
    In a skillet, cook the chicken, onion, carrot and garlic in butter until chicken is lightly brown.
    In a bowl, combine the cornstarch and broth; stir in the lemon juice, peel, salt and rice.
    Add to skillet and bring to a boil.
    Cover and simmer 5 to 10 minutes or until rice is tender.
