Bacon, Lettuce And Tomato Soup - cooking recipe

Ingredients
    6 strips bacon, cooked and crumbled
    1 Tbsp. bacon drippings, strained
    1 yellow onion, finely chopped
    2 cloves garlic, minced
    1 (16 oz.) can plum tomatoes, chopped
    3 Tbsp. tomato paste
    1 Tbsp. chopped fresh basil (1 tsp. dried)
    3 Tbsp. flour
    4 c. chicken stock
    1/4 tsp. sugar
    1 tsp. salt
    1/4 tsp. pepper
    1/4 head lettuce, shredded
Preparation
    Saute onion and garlic in bacon drippings for 5 minutes.
    Stir in tomatoes with liquid, tomato paste and basil.
    Cook 2 to 3 minutes.
    Stir in flour and whisk to blend.
    Add stock, sugar, salt and pepper.
    Simmer 15 minutes.
    Just before serving, add bacon and lettuce.
    Serve warm.
    Serves 6 to 8.
