Michael'S Danish Chocolate Chip Tart A' L'Orange - cooking recipe

Ingredients
    15 oz. container Ricotta cheese
    2 eggs
    1/4 c. sugar
    2 Tbsp. melted butter
    1/2 tsp. vanilla
    6 oz. pkg. semi-sweet morsels
    2 (4 oz.) pkg. graham crackers (mini tart crusts)
    2 (11 oz.) cans drained mandarin oranges
    1/4 c. apricot preserves
Preparation
    Preheat oven to 350\u00b0.
    In large bowl, combine Ricotta, eggs, sugar, butter and vanilla; beat well.
    Stir in chocolate chips. Spoon 1/4 cup into each crust (mini).
    Place on cookie sheet. Bake at 350\u00b0 for 20 to 25 minutes (center will be soft).
    Cool completely.
