Tuscan Pot Roast - cooking recipe

Ingredients
    1 top, bottom, or eye of round roast (5 lb.)
    3 Tbsp. cooking oil
    1 c. red wine
    1 c. water
    2 green peppers, chopped
    2 large tomatoes, seeded and chopped
    2 c. pitted ripe black olives, quartered
    1 bunch green onions, diced
    2 cloves garlic, crushed
    1 tsp. salt
    2 Tbsp. wine vinegar
    1/2 c. melted butter
Preparation
    Brown beef on all sides in oil.
    Add wine and water to meat. Cover and simmer 2 1/2 to 3 hours until meat is fork-tender.
