Shrimp Creole - cooking recipe
Ingredients

2 lb. shrimp, shelled
1 1/2 c. green pepper, chopped
1 1/2 c. chopped celery
1 c. chopped onion
1/4 c. parsley
4 slices bacon
1 clove garlic, chopped
1 Tbsp. sugar
1/2 tsp. black pepper
1/4 tsp. red pepper
1 tsp. salt
1 bay leaf
28 oz. tomato sauce
1 small can tomato paste
4 Tbsp. butter or margarine
Preparation

Cook shrimp according to directions but reserve 1 cup liquid. Fry bacon until crisp.
Saute onions, peppers, celery, garlic and parsley in skillet until tender.
(Do not add bacon at this time; drain and reserve until later.)
Add tomato sauce, tomato paste, reserved shrimp liquid, red pepper, black pepper, salt, sugar and bay leaf to ingredients that are sauteed.
Bring to boil.
Reduce heat and simmer covered 30 minutes.
Add shrimp and bacon (crumbled).
Bring to a boil; simmer 5 minutes.
Serve over rice. Serves 4 to 5 adults.
