Creole Muffins - cooking recipe

Ingredients
    1 1/4 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    4 Tbsp. sugar
    1 1/4 c. corn meal
    3 eggs, beaten
    3/4 c. milk
    1 c. water
    1/2 c. oil
    1 1/2 tsp. butter
    1/2 c. bell pepper, chopped
    1 Tbsp. hot pepper, chopped
    2 Tbsp. onion, grated
    1 small jar pimiento, chopped
    2 c. grated Cheddar cheese
Preparation
    Sift flour, baking powder, salt, sugar and corn meal together. Combine eggs and milk and add to dry ingredients, stirring only enough to moisten.
    Add oil, butter, peppers, onion, pimiento and cheese.
    Combine, stirring only enough to moisten.
    Do not overstir.
    Place in greased muffin tins. Bake at 400\u00b0 for 20 to 25 minutes.
    Makes 3 1/2 to 4 dozen.
