Ingredients

2 (10 oz.) pkg. frozen spinach, chopped, thawed and squeezed dry
2 c. stuffing mix, crushed
1 c. grated Parmesan cheese
1 stick butter, melted
4 scallions, finely chopped
3 eggs
dash of freshly grated nutmeg
1/2 c. powdered dry mustard
1/2 c. white vinegar
1/4 c. sugar
1 egg yolk
Preparation

Combine spinach, stuffing mix, cheese, butter, scallions, 3 eggs and nutmeg.
Shape into 1-inch balls.
Refrigerate or freeze until ready to use.
Bake on greased baking sheet at 350\u00b0 until golden brown, 10 to 15 minutes, if thawed, and 20 minutes, if frozen.
Makes 70 balls.
