Eggplant Casserole - cooking recipe
Ingredients

2 small eggplants
1/2 lb. cheese
1 c. bread crumbs (4 slices)
2 eggs, slightly beaten
dash of pepper
1 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
Preparation

Peel eggplant, slice and boil in water until tender (5 to 10 minutes).
Drain and mash.
Saute meat and onion in skillet.
Add meat mixture, eggs, bread crumbs, cheese and seasoning to eggplant.
Mix well; pour into a 2-quart casserole.
Bake at 300\u00b0 for 35 to 40 minutes.
