San Antonio Skillet Supper - cooking recipe
Ingredients

1/2 lb. smoked sausage
1 c. white rice
1 (14 1/2 oz.) can stewed tomatoes
1 c. water
2/3 c. thick and chunky salsa or picante sauce
1 (8 oz.) can dark red kidney beans, rinsed and drained
avocado slices, sour cream and chopped cilantro (optional toppings)
Preparation

Cook sausage in half lengthwise.
Cut crosswise into 1/4-inch slices.
In a 10-inch skillet, combine rice, sausage and remaining ingredients except optional toppings.
Mix well, breaking up tomatoes with large spoon.
Bring to boil.
Reduce heat.
Cover and simmer 20 minutes.
Remove from heat; let stand covered 5 minutes.
Top as desired and serve with additional salsa or picante sauce.
Makes 4 servings.
