Tex-Mex Salad - cooking recipe
Ingredients

1 orange, peeled and diced
1 small can mandarin orange slices, drained
5 medium tomatoes, seeded and diced
2 avocados, peeled, pitted and diced
1 can corn kernels, drained
1 small green pepper, diced
1 small red pepper, diced
1 small red onion, minced
1 handful black olive slices
1/3 c. olive oil
4 Tbsp. fresh lime juice
3 Tbsp. mint, minced
lettuce leaves
Preparation

Combine first 9 ingredients in bowl.
Using a fork, gradually mix oil into lime juice in small bowl.
Season with salt and pepper.
Add to salad with mint and mix well.
Line plates (or serving bowl) with lettuce leaves.
Mound salad on lettuce.
