Healthy Banana-Nut Muffins - cooking recipe
Ingredients

1 c. all-purpose flour
1 c. whole wheat flour
3/4 c. brown sugar
1/2 c. chopped walnuts
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 medium bananas, mashed
2 large eggs
1 c. milk
1/3 c. oil
Preparation

Preheat oven to 400\u00b0 (200\u00b0C).
Mix both flours with sugar and walnuts.
Stir in baking powder, cinnamon and salt.
Place mashed bananas in separate bowl.
Add eggs, milk and oil and mix well. Add wet ingredients to dry, mixing just until moistened.
Spoon into lightly greased muffin tins and bake 15 to 20 minutes, depending on size.
Cool on wire racks.
Serves 6 to 8.
