Arroz Con Pollo(Rice With Chicken) - cooking recipe

Ingredients
    1 chicken (2 1/2 lb.), cut up
    1/4 tsp. saffron
    1 onion
    1 Tbsp. flour
    1/2 tsp. salt
    1/4 c. olive oil
    1/4 lb. lean ham or Canadian bacon, diced
    1 bunch scallions, chopped
    1 small can pimentos, drained and diced
    2 Tbsp. minced parsley
    1 bay leaf, crumbled
    1 c. long grain rice
    2 1/2 c. chicken broth
    salt to taste
Preparation
    Separate breasts, wings, drumsticks and liver.
    Place remaining parts of chicken in saucepan with 3 cups water, peeled onion, saffron and 1 1/2 teaspoons salt.
    Boil 30 minutes; strain to make 2 1/2 cups.
