Chicken Fricasse - cooking recipe

Ingredients
    1 (3 1/2 lb.) chicken, cut up
    3 Tbsp. butter
    2 Tbsp. flour
    1/3 c. chopped onion
    1 clove garlic, minced
    5 sprigs fresh tarragon
    1 carrot, peeled, quartered and cut in 1-inch lengths
    1/4 lb. mushrooms
    1 1/2 c. water
    1 c. cream
    1 Tbsp. chopped tarragon
Preparation
    Fry chicken in butter (use heavy skillet) for 5 minutes; add onion, garlic and tarragon sprigs.
    Sprinkle with flour, stirring to distribute flour evenly.
    Add water and carrots.
    Cover and cook for 20 minutes.
    Remove chicken and keep warm.
    Let the sauce cook down, stirring often, for about 5 minutes.
    Remove tarragon; add cream, salt and pepper.
    Simmer 3 minutes.
    Stir in chopped tarragon and serve with rice.
    Serves four.
