Fresh Vegetable Casserole - cooking recipe
Ingredients

2 large onions, sliced
3 Tbsp. butter (more or less)
3 carrots, sliced
1 medium green pepper, sliced
1/2 lb. green beans
2 large tomatoes, peeled and sliced
1/4 c. chopped parsley
1 tsp. salt
pepper (optional)
Preparation

Saute onions in butter until golden.
Separate into rings, if desired.
Add pepper rings and cook until tender.
Combine ingredients in a 2-quart shallow casserole and toss lightly. Cover and bake at 350\u00b0 for 1 1/2 hours or until vegetables are tender, stirring once.
