Chili Corn Muffins - cooking recipe
Ingredients

1 c. flour
1 c. cornmeal
2 Tbsp. sugar
1 Tbsp. baking powder
2 tsp. chili powder
3/4 tsp. salt
1 scallion
1 c. milk
1/2 c. applesauce
1 egg
1 can corn, drained
Preparation

In mixing bowl, combine the flour, cornmeal, sugar, baking powder, chili powder and salt.
Chop scallion.
Beat milk, applesauce and egg until just combined and stir in scallion and corn.
Stir flour mixture into milk mixture until just combined but still lumpy.
Spoon into prepared muffin pans.
Bake until edges start to brown.
Bake at 400\u00b0 for 15 to 20 minutes.
They are great with chili and soups.
