Zucchini And Cheese Bake - cooking recipe
Ingredients

4 medium zucchini, sliced very thin
2 large tomatoes, chopped up
2 onions, sliced and chopped
1 green pepper, cut into small pieces
2 cloves garlic, chopped up
2 c. Mozzarella cheese
olive oil
Preparation

In a large skillet, put in a couple of tablespoons olive oil and saute garlic, onions, tomatoes and green pepper.
Saute until pepper is tender and tomatoes are mushy.
Set aside.
Saute zucchini in some more olive oil.
Cook until zucchini is 1/2 done, just tender.
Heat oven to 350\u00b0.
Mix vegetables together with zucchini and put in a large glass or Corning pie or quiche dish. Cover with 2 cups of cheese.
Bake for 20 to 30 minutes, until cheese is melted and bubbly.
