Polynesian Chicken - cooking recipe
Ingredients

5 lb. chicken, disjointed and cut up
3 large onions, sliced
3 c. bean sprouts
2 c. bamboo shoots
2 c. crushed pineapple
soy sauce to taste
1 c. sherry (optional)
1/2 c. cornstarch
oil (for sauteing)
Preparation

Fry chicken pieces in oil until brown.
Saute onions in same pan; add sherry (or other liquid).
Stir, scraping brown bits loose and blending into liquid to combine with chicken in pan.
Add crushed pineapple and water or stock and braise 25 minutes.
Add bean sprouts and bamboo shoots.
Thicken with cornstarch.
Serves 20.
