Cheesy Scalloped Potatoes - cooking recipe
Ingredients

1/4 c. butter or margarine
1/4 c. all-purpose flour
1/2 tsp. salt
2 c. milk
1 c. shredded Cheddar cheese
2 Tbsp. chopped chives
6 medium red potatoes, sliced
Preparation

Preheat oven to 375\u00b0.
Spray 2-quart baking dish with nonstick cooking spray; set aside.
In small saucepan over medium heat, melt butter.
Stir in flour and salt until smooth.
Gradually stir in milk.
Bring to a boil, stirring frequently.
Boil 2 minutes until thickened, stirring constantly.
Add cheese and chives; stir until cheese is melted.
Arrange potato slices in prepared baking dish. Spoon cheese-chive mixture over potato slices.
Cover with aluminum foil and bake 45 minutes.
Remove foil and bake 30 minutes more until potatoes are tender and top is golden brown.
Garnish with fresh chives.
Makes 4 servings.
