Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 tsp. vanilla
    2 c. shredded zucchini
    3 c. flour
    2 tsp. baking soda
    1 1/2 tsp. cinnamon
    1 tsp. salt
    3/4 tsp. nutmeg
    1/4 tsp. baking powder
    1 c. chopped dates or raisins
    1 c. ground pecans
    1 (8 1/4 oz.) can pineapple, drained
Preparation
    Beat eggs, sugar, oil and vanilla until thick; sift the remaining dry ingredients together. Fold in the dates or raisins and nuts; pour into 2 greased loaf pans.
    Bake at 350\u00b0 for 1 hour or until wood pick comes out clean.
    Makes two loaves.
