Fat-Free Banana Surprise Muffins - cooking recipe
Ingredients

1 c. flour
1/2 c. quick oats
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon (optional)
2 Egg Beaters or 4 egg whites (1/2 c.)
2 large bananas, mashed
2/3 c. 1/2% or skim milk
1/3 c. light corn syrup
1/4 c. all-fruit apricot jam
Preparation

Spray 14 to 16 muffin cups with a nonfat cooking spray.
In a medium-sized bowl combine flour oats, sugar, baking power, baking soda and cinnamon.
In a large bowl whisk Egg Beaters.
Stir in mashed bananas, milk and corn syrup.
Add flour mixture; stir until blended.
Spoon into muffin cups.
Top each with about 1/2 teaspoon of jam each.
Bake at 400\u00b0 for 22 to 24 minutes.
Cool 5 minutes in pan.
