Derby'S Easy Chicken - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 (3 to 3 1/2 lb.) chicken, cut into eighths
    salt to taste
    pepper to taste
    1 large green pepper, diced
    1 large onion, diced
    2 cloves garlic, crushed
    1 (10 oz.) pkg. frozen peas
Preparation
    Heat oil in a large skillet. Season the chicken with salt and pepper.
    Brown on both sides in the heated oil. Remove chicken from pan and set aside. Add green pepper, onion and garlic to the skillet and cook, stirring frequently, until softened, about 5 minutes. Return chicken to pan. Cover and cook on medium-low for about 45 to 50 minutes, stirring often. Gently stir in frozen peas and cook for another 5 minutes. Serve with potatoes, rice or noodles. Makes 4 servings.
