Mustard Potato Salad - cooking recipe

Ingredients
    1 lb. small red potatoes, boiled and thinly sliced
    1 1/2 Tbsp. white wine vinegar
    1 Tbsp. country-style Dijon mustard
    1/2 tsp. salt
    3 Tbsp. olive oil
    2 scallions, thinly sliced
    1/4 c. diced, roasted red peppers
Preparation
    Cool potatoes completely. To make mustard dressing, in a large serving bowl, combine white wine vinegar, Dijon mustard and salt. Whisk in olive oil until well blended.
    Add sliced red potatoes, scallions and roasted red peppers.
    Toss to coat well with mustard-oil dressing.
