Baked Chicken Reuben - cooking recipe
Ingredients

4 whole chicken breasts, halved and boned
salt and pepper
1 (16 oz.) can sauerkraut, press out excess liquid
4 (4 x 6-inch) slices Swiss or Monterey type cheese
1 1/2 c. Thousand Island dressing
1 Tbsp. freshly chopped parsley
Preparation

Place skinned chicken breasts in 8-inch square baking dish that has been lightly oiled.
Lightly salt and pepper.
Place drained sauerkraut over chicken; top with cheese slices, one over each breast.
Pour dressing evenly over the cheese.
Cover with foil and bake in a 325\u00b0 oven about 1 1/2 hours or until fork can be inserted in chicken with ease.
Sprinkle with chopped parsley. Makes four servings.
Baked potato skins can also be baked at the same time.
